Crispy oven pork chops. Empty Crispy oven pork chops.

When I get the chops I like to make this recipe! Quick and easy!

Heat the oven to about 375. In a flat bowl mix a few eggs and a dash of milk. In a ziploc put a bunch of ritz crackers (I use a whole "log" for three large chops) some pepper, and a bit of spice of your choice (I use a tiny bit of crushed red peppers, garlic powder, and some cajun spice mix). Expel as much of the air as you can from the bag. Seal it. Take a pin roller (used for pie crusts) and roll the crackers till they are finely crushed. Dip the chops in the egg then in the ziploc till well coated. Place in a shallow baking pan. Add about 1/4 cup butter in pieces, I put them between the chops. Bake till browned and done, about 40-55 minutes depending on how thick the chops are. If they "bleed" and you get black spots make sure next time to thaw completely.

I do the same thing! Almost the same anyway--here's a way to make it even quicker:

Preheat oven to 425. Mix eggs and milk (and Tabasco's good, too!). On another plate, mix about 1 cup bread crumbs (probably not as crispy as ritz--great idea!) and spices (I usually use salt, pepper, cayenne, thyme and garlic powder. sometimes sage). Coat the bottom of a baking pan with olive oil. Dip each chop in the egg mix, then put onto the crumb plate and flip over (make sure to get the sides of the chops) to coat. Put in oven. Flip chops after 15 minutes. Cook for another 15 minutes.

I wanted baked chops (Thanks to you Neva!) and I realized that I didn't have ritz crackers or bread crumbs or anything. So I looked around and saw....a box of parmesan flavored cheez-its. lol. I will write what they tasted like....

Ooh--sounds good! Let me know! Want some Ritz whenever I send the garlic? Better wait to decide--maybe you'll prefer it with Cheez-Its!

Tastes better with ritz...and I can buy them at the store Neva, no worries! Smile
