Rainey's meat loaf
A quick and easy meatloaf recipe. If you want it to cook faster or you want to make something special for the kids just split into small balls and cook in a cupcake pan.
In a large bowl mix around 1 1/2 pounds of ground beef with one half a chopped onion, three tblespoons dried parsley, two eggs, one half cup milk and about one cup finely crushed saltine crackers (I put them in a ziploc bag and roll them with the roller you use for pie crusts or a can, you can also use a few sailor boy crackers if you don't have saltines), some worchestire (sp?) sauce and some pepper and salt to taste. Roll into a log and place on tinfoil on a cookie sheet or baking dish. If you use a cupcake pan make sure you don't fill them too much or else they will over flow with the grease (remove as soon as they are done). Mix about 1/2 cup brown sugar, 1/2 cup ketchup and a few dashes of worchestire sauce. Pour over the meatloaf. Cook for about an hour for the loaf, and about 1/2 hour-45 minutes for the cupcakes.
